Quinoa and Edamame Bowl with a Poached Egg

Ingredients

  • 1 cup(s) arugula (baby variety)
  • 1/2 cup(s) cooked quinoa
  • 1/3 cup(s) edamame (shelled) (cooked)
  • 1/4 cup(s) (sliced) fresh radish(es) (cut into matchsticks)
  • 1/4 cup(s) uncooked carrot(s) (cut into matchsticks)
  • 1 large egg(s) (poached)
  • 3 Tbsp kim chee (or less to taste)

Instructions
Combine arugula, quinoa, edamame, radish and carrot in a bowl; top with egg kim chee.
