Cooked frozen shrimp

Egg

Shredded carrots

Low sodium soy sauce

Instructions

Heat a nonstick skillet coated with cooking spray over medium-high heat; add roasted vegetables, rice, and shrimp; toss and heat through.

Push rice mixture to side of pan and crack egg in middle; scramble egg. Stir egg into rice mixture, add carrots and sprinkle with soy sauce; warm through and garnish with scallions.
