You don't even need to defrost the rice or shrimp first since they thaw and cook quickly in a pan over medium-high heat.

Ingredients

Cooking spray

Non starchy roasted vegetables without oil

1 cup(s), such as broccoli

Cooked medium grain brown rice

1 cup(s)

Cooked shrimp

3 oz

Egg(s)

1 large egg(s)

Shredded carrot(s)

½ cup(s)

Low sodium soy sauce

1 Tbsp, or to taste

Uncooked scallion(s)

2 Tbsp, sliced

Instructions

  1. Heat a nonstick skillet coated with cooking spray over medium-high heat; add roasted vegetables, rice, and shrimp; toss and heat through.
  2. Push rice mixture to side of pan and crack egg in middle; scramble egg. Stir egg into rice mixture, add carrots and sprinkle with soy sauce; warm through and garnish with scallions.
  3. Makes 1 serving.
