Grilled cheese for breakfast? Why not? Think of this mashup as a bacon, egg, and cheese sandwich meets "eggs in a basket" or toad in a hole. Canadian bacon brings a similar salty smokiness you expect from regular bacon but with fewer Points while gooey, melty cheese and eggs with perfectly runny yolks keep things classic.


Light multigrain bread

Reduced fat cheddar cheese

1 oz, sharp variety, sliced

Cooked Canadian bacon

  1. From 1 slice of bread, cut out a 2-inch diameter circle. Coat bread slices on both sides with cooking spray.
  2. Coat a medium nonstick skillet with cooking spray and heat over medium. Add the two slices of bread and cook until golden brown on one side, about 3 to 5 minutes. Remove the slice of bread without the hole.
  3. Flip the remaining slice of bread in the skillet. Crack an egg into the hole in the bread in the skillet. Season the egg with salt and pepper. Cover the skillet and cook 5 to 6 minutes, until the white is set.
  4. Place the cheese on top of the egg and top with the Canadian bacon. Place the other slice of bread on top, toasted side down. Flip entire sandwich over and cook 3 to 4 minutes, until bottom is toasted and cheese is melted. Serve immediately.
