Warming winter vegetarian recipes
There are a number of ways you can create hearty winter warming vegetarian dinners without using meat. Adding legumes including beans and lentils, a selection of fresh and dried herbs and spices and slow cooking your dish is just some of the ways you can create a hearty winter dish.
3 tips when using herbs and spices
1. Store dried herbs and spices in a cool, dark place with lids or packets well fastened. Don’t keep them near the stove because the heat and light will diminish the flavour more quickly.
2. Dried herbs are best added during cooking to help release their flavour, while fresh herbs can be added towards the end. When substituting dried herbs for fresh herbs, use a bit less as the flavour of dried herbs is often more intense.
3. To extract more flavour, toast whole spices in a dry frying pan for 30 seconds before grinding in a mortar and pestle. It’s also best to fry off ground spices before adding any liquid.
