Chocolate muffins

Who doesn’t love a chocolate muffin? These use chocolate and cocoa powder for double the flavour.

Preparation time 10 minutes plus cooling

150g plain flour
15g cocoa powder
1 teaspoon baking powder
½ teaspoon bicarbonate of soda
60g caster sugar
2 tablespoons honey
1 teaspoon vanilla extract
1 tablespoon vegetable oil
100ml buttermilk
2 eggs, beaten
40g dark chocolate chips

1. Preheat the oven to 180°C, fan 160°C, gas mark 4 and line a 12-hole muffin tin with paper cases.

2. Sift the flour, cocoa powder, baking powder and bicarbonate of soda together in a large mixing bowl, then mix in the caster sugar.

3. In a separate bowl, beat the honey, vanilla extract, oil, buttermilk and eggs together. Add to the flour mixture and stir until just combined. Fold the chocolate chips through.

4. Divide the mixture between the paper cases and bake for 15 minutes, then remove from the oven and leave to cool on a wire rack.
