Fresh mint, green bean & tomato salad

1 tablespoons, red wine vinegar
1 teaspoons, heaped
- Cook the beans in a large pan of boiling water for 3-4 minutes, until just tender. Drain and refresh under cold running water, then drain well. Pat dry using kitchen paper, then transfer to a serving bowl.
- In a small bowl, whisk together the oil, vinegar, mustard and garlic. Season, then drizzle over the beans. Add the mint and toss to combine. Set aside to marinate for 5 minutes, before adding the tomatoes and tossing to combine. Garnish with the extra mint leaves, then serve.
