Is there anything better than a chocolate chip cookie? Crunchy on the outside, gooey on the inside, with a generous sprinkling of chocolate chips that melt in your mouth...I think we've just answered our own question.

Chocolate chunk oatmeal cookies

 

Soft and chewy with little explosions of dark chocolate, these oaty treats are perfect for when you fancy something sweet.

You'll need:

45 g Lurpak Unsalted Butter
75 g Billington's Unrefined Light Muscovado Sugar
50 g Plain White Flour
1/2 teaspoons, level Baking powder
70 g Porridge oats
1 medium, raw Egg, whole, raw, lightly beaten
1/2 teaspoons, level Vanilla Extract
50 g Dark Chocolate, roughly chopped
1 pinch Salt

Let the baking commence:

  • Preheat the oven to 180°C, fan 160°C, gas mark 4. Line 2 baking sheets with greaseproof paper. Put the butter in a small pan and melt over a low heat. Add the sugar, and stir until dissolved.
  • Combine the flour, baking powder, and oats in a bowl with a pinch of salt, then add the butter and sugar mixture, egg and vanilla extract. Fold in the chopped chocolate.
  • Roll the mixture into 16 evenly sized balls and put them on the baking sheets, leaving plenty of space between them. Bake for 10-12 minutes or until golden, then cool on a wire rack.
