Carrots with caraway

400g carrots, peeled and halved if large
2 tsp clear honey
1-2 tsp caraway seeds, lightly crushed


  1. Bring a large pan of water to the boil, add the carrots and simmer for 10-15 mins, until tender. Drain, reserving about 1 tbsp of the cooking water.
  2. Tip the carrots back into the pan with the reserved water and heat over a very low heat. Drizzle over the honey and add the caraway seeds. Heat, shaking the pan for 1-2 mins, until the carrots are glazed.
  3. Season with a pinch of salt and some freshly ground black pepper just before serving.
