Cranberry and bulgur wheat stuffing balls

125g dried bulgur wheat
1 small onion, chopped
Fresh thyme sprigs, leaves picked
35g pancetta cubes
15g toasted flaked almonds
40g dried cranberries
1 egg, beaten
1 tbsp plain flour


  1. Preheat the oven to 190°C, fan 170°C, gas mark 5. Cook the bulgur wheat to pack instructions. Drain, rinse and spread out to dry.
  2. Cook the onion, thyme and pancetta in a frying pan for 10-15 mins, then stir in the almonds, cranberries and bulgur wheat. Leave to cool, then stir in the egg and flour. Season and chill in the fridge for at least 8 hours.
  3. While your turkey cooks, shape the stuffing into 12 equal balls. Roast them for 25-30 mins, until golden. Serve 2 stuffing balls per person.
