Plain fat free yogurt
2 medium, peeled, seeded, grated, and squeezed dry
¼ medium, seeded and finely chopped (wear gloves to prevent irritation)
2 Tbsp, fresh, chopped
Dried ground coriander
- Spoon the yogurt into a coffee filter or a cheesecloth-lined strainer placed over a bowl. Let stand 20 minutes. Discard the liquid.
- Combine the strained yogurt, cucumbers, jalapeño, mint, cumin, salt, and coriander in a medium bowl. Yields 1/4 cup per serving.
