Just as sour cream can temper the heat of your favorite chili, so can raita, a traditional condiment made with yogurt, spices, and various chopped vegetables. Designed as a cooling counterbalance for spicy Indian dishes, raita’s flavors will improve if the condiment is refrigerated in an airtight container overnight and served the next day. It will remain fresh and flavorful, covered and refrigerated, for up to 1 week. So, plan to use it to garnish a variety of dishes like roasted or grilled chicken, fish, or beef. Raita also makes a great spread for sandwiches and is delicious served as an appetizer, paired with crudités.

Ingredients

Plain fat free yogurt

Cucumber

2 medium, peeled, seeded, grated, and squeezed dry

Jalapeño pepper

¼ medium, seeded and finely chopped (wear gloves to prevent irritation)

Peppermint leaves

2 Tbsp, fresh, chopped

Ground cumin

1 tsp

Table salt

¾ tsp

Ground coriander

¼ tsp

Instructions

  1. Spoon the yogurt into a coffee filter or a cheesecloth-lined strainer placed over a bowl. Let stand 20 minutes. Discard the liquid.
  2. Combine the strained yogurt, cucumbers, jalapeño, mint, cumin, salt, and coriander in a medium bowl. Yields 1/4 cup per serving.
