If you have the grill going and fresh corn is in season, cook 2 ears to give you the 1 cup of corn kernels for this recipe, and add them to the salad at the last minute.

Ingredients

Canned black beans

15 oz, rinsed and drained

Frozen corn

1 cup(s), or fresh kernels

Scallions

8 medium, sliced

Tomato

½ cup(s), diced

Fresh lime juice

2 Tbsp

Ground cumin

1 tsp

Table salt

2 pinch(es), or to taste

Black pepper

2 pinch(es), or to taste

Instructions

  1. Combine all of the ingredients in a large bowl. Refrigerate, covered, until chilled, at least 2 hours.
  2. Serving size: about 3/4 cup
