This simple salad is great served with practically anything off the grill.

Ingredients

canned black beans

19 oz, rinsed and drained

frozen corn kernels

1 cup(s), or fresh

uncooked scallion(s)

8 medium, sliced

fresh tomato(es)

½ cup(s), diced

fresh lime juice

2 tsp

ground cumin

1 tsp

Instructions

  1. Combine all of the ingredients in a large bowl. Refrigerate, covered, until chilled, at least 2 hours. Yields about 1/2 cup of salad per serving.

Notes

If you have the grill going and fresh corn is in season, cook 2 ears to give you the 1 cup of corn kernels for this recipe, and add them to the salad at the last minute.
