Sometimes a little break with tradition can be fun and delicious. This veggie pizza was inspired by the tasty offerings at the salad bar. For a pizza that requires less chopping and slicing, use packaged broccoli florets and sliced mushrooms from the produce section of your supermarket. Give the broccoli a quick steam in the microwave to parcook it before using. As always, a recipe is a template for variation. Swap cauliflower or broccolini for the broccoli if you wish.


Pizza dough mix

10 oz, or 1 prebaked thin pizza crust

Weight Watchers Reduced-fat Mexican style shredded cheese

1 cup(s)

Uncooked broccoli

10 oz, frozen, chopped, thawed and squeezed dry

Fresh mushroom(s)

10 oz, sliced

Table salt

¼ tsp

Black pepper

tsp, freshly ground, or to taste


  1. Sprinkle the cheese evenly over crust; top with the broccoli, mushrooms, salt, and pepper. Bake until the crust is golden, the cheese is bubbling, and the mushrooms are cooked through, 10–15 minutes. Serve at once. Yields 1/4 pizza per serving.
