Wheat Berry–Apple Salad

white wine vinegar2 Tbsp
unsweetened apple juice1 fl oz, (2 tbsp)
olive oil1 Tbsp
ginger root1 Tbsp, minced, peeled, fresh
table salt½ tsp
fresh apple(s)2 medium, Gala, unpeeled, cored and diced
uncooked celery2 rib(s), medium, thinly sliced
uncooked red onion(s)1 small, diced
chopped almonds¼ cup(s), toasted
fresh parsley¼ cup(s), chopped flat-leaf
- Bring large pot of water to boil over medium-high heat. Stir in wheat berries. Reduce heat and simmer, covered, until berries are tender but still chewy, 45 minutes to 1 hour. Drain in colander and rinse until cold running water. Drain again.
- Whisk together vinegar, apple juice, oil, ginger, and salt in large bowl. Add wheat berries, apples, celery, onion, raisins, almonds, and parsley and toss to combine.
