Wheat berry–apple salad

This hearty salad is both a crowd-pleaser and very pleasing to the eye. It features wheat berries, apples, celery, red onions, raisins, toasted almonds, and lots of fresh parsley. Just keep in mind that the wheat berries will take about 45 minutes to 1 hour to cook through properly, so you may need to plan ahead, or cook them ahead of time. The rest of the salad, however, comes together in minutes. The tangy, sweet dressing is made with white wine vinegar, apple juice, olive oil, finely chopped ginger, and a touch of salt. Toss everything together, and your delicious salad is ready to go.
Ingredients
Uncooked wheat berries
1 cup(s)
White wine vinegar
2 Tbsp
Unsweetened apple juice
1 fl oz, (2 tbsp)
Olive oil
1 Tbsp
Fresh ginger
1 Tbsp, minced, peeled, fresh
Table salt
½ tsp
Apple
2 medium, Gala, unpeeled, cored and diced
Celery
2 rib(s), medium, thinly sliced
Red onion
1 small, diced
Raisins
½ cup(s)
Chopped almonds (dry-roasted or raw, unsalted, no sugar added)
¼ cup(s), toasted
Fresh parsley
¼ cup(s), chopped flat-leaf
Instructions

Bring large pot of water to boil over medium-high heat. Stir in wheat berries. Reduce heat and simmer, covered, until berries are tender but still chewy, 45 minutes to 1 hour. Drain in colander and rinse until cold running water. Drain again.

Whisk together vinegar, apple juice, oil, ginger, and salt in large bowl. Add wheat berries, apples, celery, onion, raisins, almonds, and parsley and toss to combine.
