We love this type of easy, low-maintenance recipe where you just toss all the ingredients together in one big bowl. This fresh, fruity salsa features watermelon, cucumbers, scallions, yellow peppers, jalapeños, and fresh cilantro and mint. It's delicious with grilled or broiled fish, chicken, pork, or beef. You can use balsamic vinegar instead of the lime juice for a deeper flavor. If you plan to make this recipe ahead of time, chop up and toss together the watermelon, vegetables, and herbs and store them in the fridge for a few hours, but you need to wait to combine them with the sugar, olive oil, and lime juice until just before serving.

Ingredients

Watermelon

4 cup(s), seedless, chopped into small pieces

Cucumber

1 cup(s), seedless, chopped into small pieces

Scallions

½ cup(s), chopped, chopped into small pieces (green and white parts)

Yellow bell pepper

½ large, chopped into small pieces

Jalapeño pepper

1 large, seeded, finely minced (do not touch seeds with bare hands)

Cilantro

1½ Tbsp, fresh, minced

Peppermint leaves

1½ Tbsp, fresh, minced

Sugar

1 tsp

Olive oil

1 Tbsp

Fresh lime juice

2 Tbsp

Instructions

  1. Toss all ingredients together in a large bowl. Serve at room temperature or chilled. Yields about 1/2 cup per serving.
