Tuscan Steak with White Beans & Broccolini

This Italian-inspired dinner is a fabulous quick meal for one, or easily multiplied for a crowd.

uncooked lean flank steak4 oz
sea salt1 pinch, coarse variety
black pepper1 pinch
extra virgin olive oil1 tsp
minced garlic½ tsp
rosemary½ tsp, fresh, minced
canned cannellini beans½ cup(s), rinsed, drained, warmed
cooked broccolini4 stalk(s), medium, steamed or roasted
lemon(s)⅛ medium, cut in a wedge
- Coat a stove-top grill pan with cooking spray; heat over medium-high heat. Season steak with salt and pepper; cook, turning once, until cooked to desired doneness, about 6 minutes for medium-rare. Let stand 3 minutes; thinly slice.
- Meanwhile, put oil, garlic and rosemary in small cup; microwave just until fragrant, about 30 seconds.
- Arrange steak, beans and broccolini on a plate; drizzle oil mixture over top. Season with salt and pepper; serve with a squeeze of fresh lemon.
- Makes 1 serving.
