Sloppy joes come in many shapes and sizes. We upped the veggies in this batch, swapped turkey for beef, and achieved a better bread to filling ratio by using a sandwich thin. Finely minced mushrooms add texture and flavor to the mix. The recipe calls for button mushrooms but you can use your favorite variety, or an exotic mushroom mix. Toast the roll to prevent it from becoming soggy. Garnish with pickles, red onion slices or chopped scallions.

1 medium, thinly sliced

Uncooked 99% fat-free ground turkey breast

Button mushrooms

8 oz, finely minced

No salt added canned crushed tomatoes

Worcestershire sauce

Balsamic vinegar

Instructions

  1. Lightly coat inside of a medium saucepan with cooking spray; set over medium heat for 1 minute. Add scallion; cook, stirring often, for 30 seconds, or until fragrant. Add ground turkey; cook, stirring often, for 3 minutes, or until it loses its raw, pink color. Add mushrooms; cook, stirring a few times, for 3 minutes, until they give off their liquid and it begins to evaporate.
  2. Stir in tomatoes, Worcestershire sauce, vinegar, brown sugar, garlic powder, and dried mustard. Bring to a simmer, stirring occasionally. Reduce the heat to medium-low and simmer, stirring constantly, for 5 minutes, until thickened.
  3. Spoon 1 cup into each of the buns to serve.
