Turkey mushroom sloppy joes
1 medium, thinly sliced
uncooked 99% fat-free ground turkey breast
8 oz, finely minced
no salt added canned crushed tomatoes
unpacked light brown sugar
thin whole wheat sandwich bread (roll)
- Lightly coat inside of a medium saucepan with cooking spray; set over medium heat for 1 minute. Add scallion; cook, stirring often, for 30 seconds, or until fragrant. Add ground turkey; cook, stirring often, for 3 minutes, or until it loses its raw, pink color. Add mushrooms; cook, stirring a few times, for 3 minutes, until they give off their liquid and it begins to evaporate.
- Stir in tomatoes, Worcestershire sauce, vinegar, brown sugar, garlic powder, and dried mustard. Bring to a simmer, stirring occasionally. Reduce the heat to medium-low and simmer, stirring constantly, for 5 minutes, until thickened.
- Spoon 1 cup into each of the buns to serve.
