Turkey Mushroom Sloppy Joes

We keep the sloppy joe filling super moist by adding finely minced mushroom to the mix.

no salt added canned crushed tomatoes1 cup(s)
Worcestershire sauce1 ½ Tbsp
balsamic vinegar1 ½ Tbsp
unpacked light brown sugar1 Tbsp
garlic powder½ tsp
dry mustard½ tsp

- Lightly coat inside of a medium saucepan with cooking spray; set over medium heat for 1 minute. Add scallion; cook, stirring often, for 30 seconds, or until fragrant. Add ground turkey; cook, stirring often, for 3 minutes, or until it loses its raw, pink color. Add mushrooms; cook, stirring a few times, for 3 minutes, until they give off their liquid and it begins to evaporate.
- Stir in tomatoes, Worcestershire sauce, vinegar, brown sugar, garlic powder, and dried mustard. Bring to a simmer, stirring occasionally. Reduce the heat to medium-low and simmer, stirring constantly, for 5 minutes, until thickened.
- Spoon 1 cup into each of the buns to serve.
