Spanish Chicken and Rice

Everyone has a different spice threshold. Make the dish on the mild side and leave spices on the table so your guests can choose their own amount of heat.

uncooked onion(s)2 medium, chopped
uncooked boneless skinless chicken breast(s)1 pound(s), diced
mineral water2 fl oz
canned tomatoes14 ½ oz, whole, peeled and chopped
uncooked wild rice5 ½ oz, long grain
ground turmeric½ tsp
chili powder⅛ tsp, or to taste
sweet red pepper(s)½ medium, chopped
green pepper(s)½ medium, chopped
uncooked celery½ cup(s), sliced
frozen green peas⅔ cup(s)
- Spray a large nonstick frying pan with cooking spray, heat, then brown garlic, onions and chicken.
- Add water, tomatoes, rice, turmeric and chili powder. Cover and simmer 10 minutes.
- Add peppers and celery and simmer 10 minutes more, stirring occasionally. Add peas and simmer until rice and peas are tender, 5 to 10 minutes. Adjust liquid if necessary.
