This savory one-pot meal is a breeze to make thanks to the inclusion of store bought marinara sauce. Ingredients

uncooked Yukon gold potato(es)

1 pound(s), cut into bite-size chunks

store bought marinara sauce

2 cup(s)

cooked chicken sausage(s)

9 oz, Italian-style, cut into bite-size chunks

raw Cubanelle pepper

2 large, cut into chunks

fresh shiitake mushroom

2 cup(s), caps, sliced (about 3 oz)

minced garlic

½ tsp

fennel seeds

½ tsp

fresh parsley

3 Tbsp, or basil, chopped

Instructions

  1. Combine all ingredients, except parsley, in a slow cooker. Cover and cook on low heat until potatoes are tender, about 6 hours. Stir in parsley or basil and season to taste, if desired. Yields about 1 cup per serving.

Notes

You can swap 1 pound boneless, skinless chicken thigh chunks for the sausage if you prefer (could affect SmartPoints value).
