Slow Cooker Italian Chicken Sausage Stew

uncooked Yukon gold potato(es)1 pound(s), cut into bite-size chunks
store bought marinara sauce2 cup(s)
cooked chicken sausage(s)9 oz, Italian-style, cut into bite-size chunks
raw Cubanelle pepper2 large, cut into chunks
fresh shiitake mushroom2 cup(s), caps, sliced (about 3 oz)
minced garlic½ tsp
fennel seed½ tsp
fresh parsley3 Tbsp, or basil, chopped
- Combine all ingredients, except parsley, in a slow cooker. Cover and cook on low heat until potatoes are tender, about 6 hours. Stir in parsley or basil and season to taste, if desired. Yields about 1 cup per serving.
