This savory one-pot meal is a breeze to make thanks to the inclusion of store bought marinara sauce. After 15 quick minutes of chopping vegetables, just toss the ingredients in a slow cooker, set it and come home to a warming, satisfying meal. If you cannot find Cubanelle peppers, a slightly hotter variety, Anaheim peppers can be used. If you are looking for a milder option use common green bell peppers. Serve this easy chicken dish over steamed rice, if desired. Mixed greens tossed with sliced cucumbers and a light balsamic vinaigrette makes a crunchy cool accompaniment for this dish.

Ingredients

Uncooked Yukon gold potato

1 pound(s), cut into bite-size chunks

Store-bought marinara sauce

2 cup(s)

Cooked chicken sausage

9 oz, Italian-style, cut into bite-size chunks

Cubanelle pepper

2 large, cut into chunks

Shiitake mushroom

2 cup(s), sliced, caps, sliced (about 3 oz)

Jarred minced garlic

½ tsp

Fennel seeds

½ tsp

Fresh parsley

3 Tbsp, or basil, chopped

Instructions

  1. Combine all ingredients, except parsley, in a slow cooker. Cover and cook on low heat until potatoes are tender, about 6 hours. Stir in parsley or basil and season to taste, if desired. Yields about 1 cup per serving.

Notes

You can swap 1 pound boneless, skinless chicken thigh chunks for the sausage, if you prefer.
