This old-school technique works well for coating chicken evenly allowing baked chicken burst with flavor. Only 5 minutes of prep time and the chicken is ready for the oven. The clever use of cornflakes in the coating adds the delicious crunch to the final product. Saute some green beans and cook a little corn on the cob to complete this American favorite. Kids will love the crisp baked chicken. Leftovers are great for topping a salad or eating cold for an easy take-along lunch.

Ingredients

Cornflake crumbs

All-purpose flour

1 Tbsp

Paprika

2 tsp

Dark brown sugar

1 tsp

Garlic powder

¾ tsp

Onion powder

¾ tsp

Table salt

¾ tsp

Ground cumin

½ tsp

Uncooked skinless boneless chicken breast

2 pound(s), or 4 bone-in chicken breast halves

Instructions

  1. Combine the cornflake crumbs, flour, paprika, sugar, garlic powder, onion powder, salt, and cumin in a large zip-close plastic bag. Spray the chicken pieces lightly with nonstick spray, then place one piece in the bag. Shake the bag to evenly coat the chicken, then transfer chicken to the baking sheet. Repeat with the remaining chicken pieces; discard any remaining coating mix.
  2. Bake until a thermometer inserted into the thickest part of each breast registers 160ºF, 40–45 minutes. Yields 1 breast half per serving.

Notes

This mix makes skinless chicken breasts seem positively decadent. Enjoy the chicken hot or cold.
