- Combine the cornflake crumbs, flour, paprika, sugar, garlic powder, onion powder, salt, and cumin in a large zip-close plastic bag. Spray the chicken pieces lightly with nonstick spray, then place one piece in the bag. Shake the bag to evenly coat the chicken, then transfer chicken to the baking sheet. Repeat with the remaining chicken pieces; discard any remaining coating mix.
- Bake until a thermometer inserted into the thickest part of each breast registers 160ºF, 40–45 minutes. Yields 1 breast half per serving.
