This super simple recipe features only six ingredients. The combination of crunchy lettuce, tangy rich sun-dried tomatoes and creamy mozzarella topped with the sweet zing of balsamic vinegar is packed with flavor and eye-catching color. Have the ingredients ready and toss together at the last minute to preserve the crunch of the lettuce. Save a bit of prep time by using moist-packed sun-dried tomatoes, which don't need to be soaked in hot water. This Italian-inspired salad is a great starter for a lasagna dinner or other pasta dish. Top the salad with some grilled slices of chicken and you have a seriously delicious dinner salad.

Ingredients

Sun-dried tomatoes (without oil)

16 half/halves

Romaine lettuce

4 cup(s), shredded, lightly packed, thinly sliced

Part skim mozzarella cheese

4 oz, diced

Table salt

¼ tsp

Black pepper

¼ tsp

Balsamic vinegar

2 Tbsp, good-quality

Instructions

  1. Combine sun-dried tomatoes with enough hot water to cover in small bowl and let stand until tomatoes are softened, about 10 minutes. Drain, pat dry with paper towels, and chop.
  2. Meanwhile, combine romaine, mozzarella, salt, and pepper in salad bowl. Add sun-dried tomatoes and vinegar and toss until coated evenly.
  3. Per serving: about 1 1/3 cups
