While this sandwich may not be your typical sub, what it lacks in carbohydrates, it makes up for in crunch—in a big way. The hollowed-out cucumber stands in for a roll to provide a smarter option while still delivering the well-loved flavors of a classic Italian sub, complete with pepperoni and provolone. We’ve also added cream cheese for richness and to help hold the ingredients in place a bit better. This recipe calls for hollowing out the cucumber, but since English cucumbers have softer, edible seeds, that step is really done to help keep the ingredients from sliding out.

Ingredients

Low fat cream cheese

3 Tbsp, softened

Basil

2 Tbsp, finely chopped

Table salt

¼ tsp

Black pepper

tsp, freshly ground

English cucumber

1 large, unpeeled, halved lengthwise

Red onion

¼ cup(s), sliced, thinly sliced

Provolone cheese

1 oz, sharp-variety, very thinly sliced

Turkey pepperoni

1 oz, 16 small slices

Instructions

  1. Combine cream cheese, basil, salt, and pepper in a small bowl; set aside.
  2. Scrape out seeds from cucumber halves with a spoon.
  3. Spread cream cheese mixture thinly and evenly into hollowed out portion of cucumbers.
  4. Layer onion, cheese, and then pepperoni on cucumber bottom; sandwich with cucumber top. Press down lightly; cut into 2 pieces.
  5. Serving size: 1 sub half
