Italian cucumber subs
Low fat cream cheese
3 Tbsp, softened
2 Tbsp, finely chopped
⅛ tsp, freshly ground
1 large, unpeeled, halved lengthwise
Uncooked red onion(s)
¼ cup(s), sliced, thinly sliced
1 oz, sharp-variety, very thinly sliced
Small, thinly sliced turkey pepperoni
1 oz, 16 small slices
- Combine cream cheese, basil, salt, and pepper in a small bowl; set aside.
- Scrape out seeds from cucumber halves with a spoon.
- Spread cream cheese mixture thinly and evenly into hollowed out portion of cucumbers.
- Layer onion, cheese, and then pepperoni on cucumber bottom; sandwich with cucumber top. Press down lightly; cut into 2 pieces.
- Serving size: 1 sub half
