Take dinner to the next level with this Indian-spiced marinade that is perfect for chicken breast or thighs. It combines yogurt with traditional Indian flavors, such as garam masala, turmeric, and ginger. Garam masala is a common Indian spice blend that can contain cloves, cinnamon, coriander, and a range of other ingredients that vary by region and even by family. It’s available in most supermarkets. Turmeric gives this marinade a bold color but also a mildly aromatic flavor. Yogurt marinades help make your meat extra tender and moist, an ideal choice for cuts like chicken breast that can be a little trickier to cook to the right doneness without drying them out.

Whisk together all ingredients. Use about 2 tablespoons per pound of chicken, or 1 tablespoon for each 4- or 5-ounce thigh or skinless boneless breast. Place the meat in a zip- close plastic bag and add the marinade. Squeeze out air, seal the bag, and turn to coat the chicken. Refrigerate chicken breasts or thighs for up to 4 hours and bone-in chicken pieces up to overnight.
