Ingredients

Sherry vinegar

Olive oil

Dijon mustard

Water

Endive

2 head(s), small, medium, leaves separated

Apple

1 medium, red variety, halved, cored, and cut into wedges

Walnuts

3 Tbsp, taosted and chopped

Reduced fat feta cheese

4 Tbsp

Instructions

  1. Whisk together vinegar, oil, mustard, water, salt, and pepper in large bowl. Add endive, apple, and walnuts and toss to coat. Divide salad evenly among 4 plates. Top each with 1 tablespoon feta.
