Tortas are Mexican sandwiches made on soft white rolls and filled with anything from eggs, as we’ve done here, to pork, chicken, and vegetables. Make sure your rolls are nicely toasted to add flavor and crunch, but also to firm them up enough to hold all the ingredients.

Ingredients

Cooked turkey bacon

2 slice(s)

Fat free refried beans

½ cup(s)

Egg

2 large egg(s)

Table salt

Olive oil

Reduced fat shredded Pepper Jack cheese

¼ cup(s)

Kaiser roll

2 oz, soft rolls, or bollito, split, soft centers removed and toasted

Salsa

2 Tbsp, prepared

Cilantro

¼ cup(s), loosely packed sprigs

Instructions

  1. 1 Microwave bacon according to package directions; drain on paper towels and cut each slice crosswise in half.
  2. 2 Place beans in small microwavable bowl. Cover and microwave on High until hot, about 1 minute. Set aside.
  3. 3 Whisk together eggs, salt, and pepper until frothy. Heat oil in medium nonstick skillet over medium heat. Add eggs and swirl to cover pan. Cook, stirring gently, until underside is set, about 3 minutes. Sprinkle pepper Jack evenly over half of eggs; fold other half over filling. Slide eggs onto plate and cut in half.
  4. 4 Divide beans between bottom halves of rolls. Top evenly with eggs, salsa, bacon, and cilantro. Cover with roll tops.
  5. Serving size: (1 torta)
