Egg, bacon, and bean tortas
Cooked turkey bacon
Fat free canned refried beans
2 large egg(s)
Reduced-fat shredded Pepper Jack cheese
2 oz, soft rolls, or bollito, split, soft centers removed and toasted
Fat free salsa
2 Tbsp, prepared
¼ cup(s), loosely packed sprigs
- 1 Microwave bacon according to package directions; drain on paper towels and cut each slice crosswise in half.
- 2 Place beans in small microwavable bowl. Cover and microwave on High until hot, about 1 minute. Set aside.
- 3 Whisk together eggs, salt, and pepper until frothy. Heat oil in medium nonstick skillet over medium heat. Add eggs and swirl to cover pan. Cook, stirring gently, until underside is set, about 3 minutes. Sprinkle pepper Jack evenly over half of eggs; fold other half over filling. Slide eggs onto plate and cut in half.
- 4 Divide beans between bottom halves of rolls. Top evenly with eggs, salsa, bacon, and cilantro. Cover with roll tops.
