7 medium, thinly sliced
Sweet red pepper(s)
1 medium, seeded and chopped
6 oz, picked over for pieces of shell
⅛ tsp, freshly ground, or to taste
Regular liquid egg substitute
- Spray a 10-inch nonstick skillet with nonstick spray and set over medium-high heat. Add the scallions and bell pepper; cook, stirring, until softened, about 2 minutes.
- Sprinkle the crab, salt, and pepper over the vegetables; cook, stirring, about 30 seconds. Pour in the egg substitute and swirl to cover the pan.
- Cover and reduce the heat to low. Cook until set, about 9 minutes. Run a spatula under the frittata to loosen it from the pan. Slide onto a serving plate and cut into 6 wedges. Yields 1⁄6 of frittata per serving.
