Crabmeat can be found refrigerated at the fish counter of many supermarkets, usually in plastic containers.

Ingredients

Scallions

7 medium, thinly sliced

Red bell pepper

1 medium, seeded and chopped

Cooked crabmeat

6 oz, picked over for pieces of shell

Table salt

½ tsp

Black pepper

tsp, freshly ground, or to taste

Liquid egg substitute

1½ cup(s)

Instructions

  1. Spray a 10-inch nonstick skillet with nonstick spray and set over medium-high heat. Add the scallions and bell pepper; cook, stirring, until softened, about 2 minutes.
  2. Sprinkle the crab, salt, and pepper over the vegetables; cook, stirring, about 30 seconds. Pour in the egg substitute and swirl to cover the pan.
  3. Cover and reduce the heat to low. Cook until set, about 9 minutes. Run a spatula under the frittata to loosen it from the pan. Slide onto a serving plate and cut into 6 wedges. Yields 1⁄6 of frittata per serving.
