Chicken, caramelized onion, and goat cheese pizza
3 large, thinly sliced
3 medium clove(s), minced
1 tsp, fresh, minced
Cooked skinless boneless chicken breast(s)
2 cup(s), chopped, diced
10 medium, Kalamata variety, pitted and thinly sliced
Thin 12" ready-to-bake pizza crust
Reduced-fat goat cheese
2⅔ oz, crumbled (2/3 cup)
2 Tbsp, chopped fresh flat-leaf
- 1 Preheat oven to 450°F. Spray large baking sheet with nonstick spray.
- 2 Heat oil in large skillet over medium-high heat. Add onions; cook, covered, stirring occasionally, until onions are deep golden, about 30 minutes. Stir in garlic and rosemary; cook, stirring frequently, until fragrant, about 30 seconds. Stir in vinegar. Remove pan from heat and stir in chicken, olives, salt, and pepper.
- 3 Top crust evenly with chicken mixture; sprinkle evenly with goat cheese. Bake until cheese softens and crust is crisp, 8–10 minutes. Sprinkle with parsley and cut into 6 wedges.
