Catfish is a firm-fleshed fish with a slightly sweet flavor. Here, Cajun seasoning and lime give it a Southwestern flair.

Ingredients

Yellow cornmeal

Uncooked catfish

1 pound(s), cut into 4 pieces

Arugula

1 bunch(es), trimmed, rinsed, and patted dry

Lime zest

Fresh lime juice

1 clove(s), or to taste, minced

Instructions

  1. Preheat the oven to 500°F. Spray a baking sheet with nonstick spray. Combine the cornmeal, flour, Cajun seasoning, pepper, and 1⁄4 teaspoon of the salt on a plate.
  2. Lightly beat the egg in a shallow dish; add the fish, turning to coat both sides. Lift the fish from the egg and coat it with the cornmeal mixture.
  3. Arrange the fish on the baking sheet. Lightly spray the tops with non­stick spray and bake, without turning, until just opaque in the center and crisp and golden on the outside, about 10 minutes.
  4. Arrange the arugula on a large platter. Combine the lime zest, lime juice, oil, garlic, sugar, and the remaining 1⁄8 teaspoon salt in a small bowl; sprinkle over the arugula. Top with the fish.

Notes

Remove any fishy odors from your hands and cutting board by rubbing them with a cut lemon.Serve with boiled red-skinned potatoes, seasoned with salt, pepper, and chopped parsley.
