Caesar salad had its heyday in the sixties, was rediscovered in the nineties, and is better than ever today. Our version eliminates the raw egg.

Ingredients

Garlic clove(s)

1 medium clove(s), bruised

Reduced-sodium chicken broth

¼ cup(s)

Olive oil

4 tsp

Fresh lemon juice

1 Tbsp

Uncooked european anchovies

oz, paste

Dry mustard

½ tsp

Black pepper

tsp, freshly ground

Romaine lettuce

1 head(s), torn into bite-size pieces

Fat-free packaged croutons

Instructions

  1. Rub a large salad bowl with the garlic clove, then combine the garlic with the broth, oil, lemon juice, anchovy paste, mustard, and pepper in the bowl. Let stand 5 minutes, then discard the garlic. Add the lettuce to the bowl; toss to coat evenly. Sprinkle with the croutons and cheese. Yields 2 cups per serving.
