Burger skewers with special sauce

A fun, low-carb spin on a classic burger (special sauce and all), these kebabs use skewers, instead of buns, to hold everything together. For an adorable appetizer, thread 1 burger, tomato, pickle slice, and lettuce chunk onto a short skewer.

Unsweetened dill pickle
3 spear(s), divided
Plain fat free Greek yogurt
¼ cup(s)
Ketchup
2 Tbsp
Black pepper

Uncooked 95% lean ground beef
1 pound(s)
Onion powder

Iceberg lettuce

Coat a grill rack or grill pan with cooking spray and preheat to medium-high.

Finely chop a quarter of 1 pickle. In a small bowl, combine the chopped pickle, yogurt, ketchup, and ¼ tsp black pepper. Cut the remaining pickles into 16 (½-inch-thick) slices.

In a medium bowl, combine the beef, onion powder, salt, and remaining ½ tsp black pepper. Divide the meat into 16 equal portions and shape each into a ball. Flatten the balls slightly. Cut the lettuce into 16 chunks. Using 8 medium skewers, alternately thread 2 patties, 2 tomatoes, 2 pickle slices, and 2 lettuce chunks onto each skewer.

Transfer the skewers to the grill. Grill until the patties are cooked to desired doneness, 2 to 4 minutes per side for medium. Serve with the sauce.
