Blue Cheese Dressing

Serve this tasty dip with your favorite crudit.
part-skim ricotta cheese6 Tbsp
low-fat buttermilk¼ cup(s), preferably nonfat
blue cheese¼ cup(s), crumbled
vinegar1 Tbsp, cider
Worcestershire sauce½ tsp
chives2 tsp, fresh, chopped
black pepper⅛ tsp, freshly ground, or to taste
- Puree the ricotta, buttermilk, blue cheese, vinegar, Worcestershire sauce, and ketchup in a food process or blender. Transfer to a small bowl; fold in the chives and pepper. Refrigerate the dressing in an airtight container for up to 2 days. Makes 6 servings (2 tablespoons per serving).
