Ingredients

Radishes

5 medium, halved and thinly sliced crosswise

Kirby cucumber

1 average, 1 large, diced

Bell pepper

½ item(s), medium, diced

Scallions

3 medium, sliced

Cilantro

1 Tbsp, chopped

Fresh lime juice

Table salt

Uncooked tilapia fillet

24 oz, four 6-ounce pieces

Blackening seasoning

Instructions

  1. Mix together radishes, cucumber, bell pepper, scallions, cilantro, lime juice, salt, black pepper, and 1 teaspoon oil in medium bowl.
  2. Heat remaining 1 teaspoon oil in large nonstick skillet over medium-high heat. Sprinkle tilapia with blackened seasoning and add fish to skillet in single layer (cook in batches if necessary). Cook until just opaque in center, about 3 minutes per side.
  3. Place 1 fish fillet on each of 4 plates. Top evenly with salsa.
  4. Serving size: 1 fillet with 1/2 cup salsa
