A strata is a custardy, cheesy casserole that is wonderful to make if you're having people over for a hearty breakfast or brunch, or for any special occasion. This version features turkey bacon, asparagus, onions, skim milk, Dijon mustard, and two types of cheese (cheddar and Parmesan). It's a great way to use up your eggs and wheat bread. You'll also use the broiler so the egg mixture can set, as well as to melt the cheddar cheese. Just be sure to keep an eye on your strata as it broils, since broilers can vary quite a bit in intensity and you don't want anything to overcook.

Canola oil

Uncooked turkey bacon

4 slice(s), cut into 1/4-inch pieces

Asparagus

2 cup(s), (1-inch) pieces, or diced green bell pepper

Uncooked onion

1 small, chopped

Reduced-calorie whole wheat bread

4 large egg(s)

Egg whites

Fat free skim milk

¾ cup(s)

Dijon mustard

Grated Parmesan cheese

4 oz, (about 1 cup), shredded

Instructions

  1. Heat oil in large ovenproof skillet over medium heat. Add bacon and cook, stirring, until browned, about 4 minutes. Add asparagus and onion; cook, stirring, until softened, about 5 minutes. Transfer to plate and keep warm.
  2. Preheat broiler.
  3. Spray same skillet with nonstick spray. Arrange slices of bread in bottom of skillet, fitting them snugly and overlapping as needed.
  4. Whisk together eggs, egg whites, milk, mustard, salt, and pepper in medium bowl; pour over bread, allowing milk mixture to soak in. Sprinkle bread with 1 tablespoon of Parmesan. Set skillet over medium heat and cook, shaking pan frequently, until egg mixture is almost cooked through, about 5 minutes.
  5. Place skillet under broiler 5 inches from heat and broil until egg mixture is set, about 2 minutes. Remove skillet from broiler (leave broiler on); top bread with bacon-asparagus mixture, Cheddar, and remaining 1 tablespoon Parmesan. Return to broiler until Cheddar is melted, about 2 minutes longer.
