This is a low, low-fat version of a south-of-the-border favorite. It's a savory, delicious, addicting 20-minute appetizer that you'll find yourself making over and over again whenever you have extra asparagus on hand. You and your guests will love the unique take on creamy guacamole, traditionally made with avocados. After puréeing cooked asparagus, simply stir in the other goodies, ranging from mayonnaise and fresh lime juice to scallions, garlic, Worcestershire sauce, and hot pepper sauce. Feel free to adjust the jalapeños and hot pepper sauce depending on your heat tolerance. You can serve this guacamole with a colorful array of fresh vegetables or a basket of low-fat chips.

Ingredients

Asparagus

1½ pound(s), trimmed

Reduced calorie mayonnaise

Fresh lime juice

Cilantro

¼ cup(s), coarsely chopped

Scallions

3 medium, thinly sliced

Jalapeño pepper

Instructions

  1. Bring large pot of water to boil. Add asparagus and cook until tender, about 10 minutes. Drain.
  2. Place asparagus into food processor and purée until smooth. Stir in remaining ingredients and serve. Yields 1/4 cup per serving.
