This is a low, low-fat version of a south-of-the-border favorite. Serve it with a colorful array of fresh vegetables or a basket of low fat chips.

Ingredients

uncooked asparagus

1½ pound(s), trimmed

reduced calorie mayonnaise

1 Tbsp

fresh lime juice

1 Tbsp

cilantro

¼ cup(s), coarsely chopped

uncooked scallion(s)

3 medium, thinly sliced

jalapeño pepper(s)

½ medium, minced

garlic clove(s)

1 medium clove(s), minced

Worcestershire sauce

Tbsp

hot pepper sauce

table salt

tsp, or to taste

black pepper

tsp, or to taste

Instructions

  1. Bring large pot of water to boil. Add asparagus and cook until tender, about 10 minutes. Drain.
  2. Place asparagus into food processor and purée until smooth. Stir in remaining ingredients and serve. Yields 1/4 cup per serving.
