Asian Turkey Lettuce Wraps

uncooked scallion(s)3 medium, thinly sliced
uncooked bell pepper(s)1 item(s), medium, yellow or red, seeded and diced
ginger root1 tsp, grated peeled
uncooked ground turkey breast1 pound(s)
low sodium soy sauce3 Tbsp
garlic chili paste½ tsp
bibb lettuce8 leaf/leaves, large, or iceberg
cilantro¼ cup(s), chopped
fresh lime(s)½ item(s)
- Heat oil in large skillet over medium-high heat. Add scallions, bell pepper, and ginger and cook, stirring constantly, until vegetables just begin to soften, about 1 minute.
- Add turkey and cook, breaking it apart with wooden spoon, until browned and cooked through, about 5 minutes. Stir in soy sauce and chili-garlic sauce.
- Divide turkey mixture evenly among lettuce leaves. Sprinkle evenly with cilantro. Roll up tightly and serve at once with lime wedges.
