Here's a delicious entrée and side that comes together in just about 20 minutes. The simple but satisfying couscous is flavored with dried cranberries, olive oil, salt, pepper, scallions, and parsley. Simply season the fish, then let it pan-sear for a few minutes in a skillet, and your dinner is all ready to go. We love the tender, sweet taste of arctic char, but you can use trout or salmon instead. And feel free to round out the meal with a fresh green vegetable, such as steamed green beans. For the freshest beans, purchase them at a farmers’ market during the summer and early fall.
