Arctic Char with Cranberry Couscous

uncooked whole wheat couscous

dried cranberries

cup(s), or cherries

olive oil

table salt

black pepper

uncooked scallion(s)

2 medium, chopped

fresh parsley

cup(s), fresh, chopped

uncooked arctic char

1 pound(s), four 4 oz pieces


  1. Bring the water to a boil in a medium saucepan. Stir in the couscous, cranberries, oil, 1⁄2 teaspoon of the salt, and the pepper. Remove the saucepan from the heat. Cover and let stand 5 minutes, then fluff the couscous mixture with a fork.
  2. Spoon the couscous mixture into a serving bowl and stir in the scallions and parsley.
  3. Sprinkle the arctic char with the remaining 1⁄2 teaspoon salt. Spray a large nonstick skillet with nonstick spray and set over medium-high heat. Add the fish and cook until just opaque in the center, about 3 minutes on each side. Serve with the couscous. Yields 1 arctic char fillet and scant 1 cup couscous mixture per serving.
