- Total Time
Round out the meal with a fresh green vegetable, such as steamed green beans.
water1 ¼ cup(s)
uncooked whole wheat couscous1 cup(s)
dried cranberries⅓ cup(s), or cherries
olive oil1 tsp
table salt1 tsp
black pepper¼ tsp
uncooked scallion(s)2 medium, chopped
fresh parsley⅓ cup(s), fresh, chopped
uncooked arctic char1 pound(s), four 4 oz pieces
- Bring the water to a boil in a medium saucepan. Stir in the couscous, cranberries, oil, 1⁄2 teaspoon of the salt, and the pepper. Remove the saucepan from the heat. Cover and let stand 5 minutes, then fluff the couscous mixture with a fork.
- Spoon the couscous mixture into a serving bowl and stir in the scallions and parsley.
- Sprinkle the arctic char with the remaining 1⁄2 teaspoon salt. Spray a large nonstick skillet with nonstick spray and set over medium-high heat. Add the fish and cook until just opaque in the center, about 3 minutes on each side. Serve with the couscous. Yields 1 arctic char fillet and scant 1 cup couscous mixture per serving.
