In the last couple of years, beets have made their way into common cooking culture. These brilliantly hued root vegetables — colored golden, candy-striped, or purple — help dishes stand out. The key is to buy the best ones.

Available year-around, beets are best during the winter months when baby beets are easier to find. Baby beets, or small-sized ones, tend to be sweeter and more tender than their old and larger counterparts.

When choosing which beets to buy, pick up the vegetable. If it is heavy for its size and the greens, if attached, look fresh, place it in your cart. 

When you get them home, remove the greens so that there is a one-inch of the stem left attached. Then store the beets in a plastic bag for up to 3 weeks in the refrigerator.
