Spiralized Beet Slaw with Lime and Pepitas

Roughly chop the spiralized beet strands to make this slaw easier to eat.

Ingredients

lime zest

1 tsp, grated

fresh lime juice

2 Tbsp

olive oil

1 Tbsp

garlic clove(s)

1 medium clove(s), crushed through a garlic press

cumin seeds

1 tsp, crushed

table salt

½ tsp

black pepper

¼ tsp, freshly ground

uncooked beets

3 medium, peeled (about 3/4 lb)

uncooked red cabbage

2 cup(s), thinly sliced

uncooked scallion(s)

2 medium, thinly sliced

fresh oregano

3 Tbsp, chopped

queso cotija

6 Tbsp, or Parmesan cheese, coarsely shredded

roasted salted pepitas

3 Tbsp, (pumpkin seeds)

Instructions

  1. In a large bowl, whisk together lime zest and juice, oil, garlic, cumin, salt and pepper.
  2. Spiralize beets; add to dressing.
  3. Add cabbage, scallions and oregano to beets; toss to coat. Sprinkle with cheese and pepitas; serve.
  4. Serving size: 1/2 c slaw
