Beets and chickpeas unite in this universally-loved spread. Serve with crudité, baked chips or pita wedges.

Ingredients

canned drained chickpeas

15 oz, rinsed and drained

cooked beets

8 oz, roasted, steamed or canned

fresh lemon juice

6 Tbsp

tahini

2½ Tbsp

garlic clove(s)

2 medium clove(s)

ground cumin

½ tsp

table salt

¼ tsp

olive oil

1 Tbsp

Instructions

  1. Put all ingredients, except oil, in bowl of a food processor; process until nearly smooth, 30 seconds to 1 minute.
  2. With machine running, drizzle oil into feeder chute; process until fully pureed, 30 seconds more.
  3. Serving size: 1/4 cup
