A delicious tea time treat, our Spice Pots Fruit Loaf is packed full of dried fruit and is easy to prepare! It freezes well too. A great one to feed a house full at Christmas time. Decorate with some sprigs of holly!

Ingredients

Light Brown Sugar

Low Fat Spread

White Self Raising Flour

225 g

Bicarbonate of Soda

½ teaspoon(s), level

Spice Pots Sweet Spice Blend

3 teaspoon(s), level

Egg, whole, raw

2 medium, raw

Skimmed Milk

4 tablespoon(s)

Mixed Dried Fruit

Instructions

  1. In a bowl, mix together the sugar, low-fat spread, flour, bicarbonate soda and the sweet spice. Add the beaten eggs and skimmed milk and stir to combine.
  2. Add the dried fruit mixture and stir so the fruit is incorporated into the cake mixture.
  3. Spoon the cake mixture into a lined or greased 2lb loaf tin.Bake in pre-heated oven for 60 minutes at 150°C, fan 130°C, gas mark 3
