A super easy dinner that uses apples in a surprisingly delicious way

Ingredients

New potatoes, raw

350 g, scrubbed and halved

Red pepper

2 medium, deseeded and sliced

Garlic

3 clove(s), peeled and pressed using the back of a knife

Apple

2 medium, braeburn, cored and cut into wedges

Reduced fat pork sausages, grilled

8 medium

Wholegrain Mustard

1 tablespoon(s), level

Honey

2 teaspoon(s), level

Calorie controlled cooking spray

Broccoli, raw

4 portion(s), medium, broken up

Sage, fresh

Instructions

Preheat oven to 190°c, fan 170°c fan, gas mark 5. Add all the vegetables and sausages to a medium roasting tin.

In a small bowl mix together the mustard and honey with 50ml warm water and then pour over the contents of the roasting tin and add plenty of seasoning. Spray with the cooking spray and toss together so everything is coated and, making sure the sausages are on top of the veg, transfer to the oven.

After 30 mins, take out and toss along with the broccoli and sage. Put back in the oven and cook for a further 20-25 mins until the sausages are cooked through and everything is golden and/or caramelised. Serve with your side of choice.
