125 g, drained

Spinach

50 g, baby leaves

Wholemeal English Muffin

Avocado

¼ medium, thinly sliced

Curry Powder

½ teaspoons

Notes

Heat olive oil in frying pan. Stir fry shallot and pepper until tender. Add a pinch of curry powder. Add tofu and spinach leaves and stir fry until tofu has broken up and spinach has wilted. Top muffin with avocado and tofu mixture. Season with salt and pepper.
