Notes

Heat a char-grill pan or heavy-based frying pan. Spray both sides of the steak with calorie controlled cooking spray. (When char-grilling, always spray the food, not the pan).

Place in the pan and cook over a medium-high heat for 3-4 minutes on each side, depending on the thickness of the steak and how you like them cooked. Test with a sharp knife, and cook for a little longer if preferred.

Meanwhile, mix the spinach, tomatoes and chilli (if using) together. Serve the steak, topped with the spinach mixture. Sprinkle the feta cheese and balsamic vinegar on top and season with black pepper.
