Give starchy side dishes new flare with our scrumptious, nutty-tasting wheat berry salad. Just keep in mind that you'll have to soak the wheat berries in cold water overnight, and then they'll take about 2 hours to cook through properly. If you can't find wheat berries or you're pressed for time, bulgur or couscous can be used in their place. But we love how the wheat berries complement the scallions, dried cranberries, balsamic vinaigrette, and fresh lemon juice and mint in this very straightforward, low-maintenance salad recipe. The wheat berries are well worth the extra prep time, which is mostly hands-off, and you'll love the results in flavor and texture.

Ingredients

Uncooked wheat berries

1 cup(s)

Scallions

3 medium, thinly sliced

Dried cranberries

½ cup(s)

Fat free balsamic vinaigrette dressing

4 Tbsp, raspberry flavor

Fresh lemon juice

3 Tbsp

Peppermint leaves

1 Tbsp, fresh, chopped

Instructions

  1. Immerse wheat berries in cold water, cover and refrigerate overnight.
  2. Drain wheat berries, add fresh water to cover and simmer until tender, about 2 hours. Drain and cool.
  3. Add remaining ingredients to wheat berries and toss well. Yields about 1/2 cup per serving.
