Light string cheese is giving this game day favorite a nutrition-filled makeover, but it’s still everything that you love about nachos. The nachos take just 20 minutes to put together and require only 6 ingredients to make. All you have to do is spread the tortilla chips on a baking sheet, top with some fat-free salsa, canned black beans, and cheese, and bake in the oven until the cheese is nicely browned and everything is heated through. Garnish with some avocado and shredded romaine lettuce right before serving for a burst of color and even more variety of texture and flavor.

Ingredients

Baked low fat tortilla chips

3 oz

Salsa

½ cup(s), mild

No-salt-added canned drained black beans

3 oz, rinsed and drained

Light mozzarella string cheese

4 stick(s), finely chopped or shredded

Avocado

½ item(s), medium, peeled, 1/2 inch diced

Romaine lettuce

½ cup(s), shredded

Instructions

  1. Preheat oven to 425°F. Coat a large baking sheet with non-stick cooking spray.
  2. Arrange tortilla chips in single layer on pan. Spoon salsa evenly over chips. Sprinkle with black beans and cheese.
  3. Bake 10 minutes or until cheese browns. Sprinkle with avocado and shredded lettuce.
  4. Serving size: 1/4 of nachos
