Yes, you read that right, this vegetarian chili can be made in just 10 minutes thanks to using your microwave. After microwaving the canned chili to warm it through, which should take just about 5 minutes, simply pour it into hollowed-out mixed grain bread rolls for a fun and creative presentation. Then top the chili off with Mexican-style shredded cheese, chopped red onion, and fresh cilantro for the finishing touches, providing lots of flavor, color, and texture. You can also add some crunch to your meal by serving the chili with a stack of celery and carrot sticks alongside for dipping.

Ingredients

low-fat or fat-free canned vegetarian chili

30 oz, 2 (15-ounce) cans

mixed grain bread

8 oz, rolls, 4 (2-ounce)

Weight Watchers Reduced-fat Mexican style shredded cheese

1 cup(s)

uncooked red onion(s)

½ small, chopped

cilantro

2 Tbsp, fresh, chopped

Instructions

  1. Put the chili in a large microwavable bowl. Microwave on High until heated through, about 5 minutes, stirring once or twice.
  2. Meanwhile, slice the top third off each roll. Pull out the soft bready center to form bread bowls. Spoon the chili evenly into the bread bowls and top evenly with the cheddar, onion, and cilantro. Yields 1 filled bowl per serving.
