Everyone loves a snack board for dinner, especially when you theme it to an occasion. Here we’re featuring heart-shaped whole-wheat pizzas and an array of red-hued fruits and veggies in honor of Valentine’s Day. The pizzas come together quickly with whole-wheat tortillas as the crust; they get wonderfully crisp and cook in a flash. Be sure to start with 6-inch tortillas so you’ll have enough sauce and cheese to cover them (larger tortillas, of course, will require more toppings).

Cooking spray

4 spray(s)

Whole-wheat tortilla

4 tortilla(s), medium, 6-inches each

Marinara sauce

½ cup(s)

Shredded part skim mozzarella cheese

6 Tbsp

Turkey pepperoni

12 piece(s)

Plain hummus

¾ cup(s)

8 medium

Red bell pepper

1 medium, cut into strips

4 oz, 1 head, leaves separated

Belgian endive

1 head(s), red, leaves separated

Grape tomatoes

½ cup(s)

Red seedless grapes

1½ cup(s)

1 cup(s)

1 item(s), 4", cut into 4 wedges

  1. Preheat the oven to 425°F. Line a large sheet pan with parchment paper. Cut each tortilla into a heart shape. Coat both sides of the tortillas with cooking spray. Place the tortillas directly on the oven rack. Bake at 425°F until crisp, about 5 minutes. Cool slightly on a wire rack.
  2. Place the tortillas on the prepared sheet pan. Spread 2 tbsp marinara sauce over each tortilla; top each with 1 ½ tbsp cheese and 3 pepperoni pieces. Bake until the cheese melts, about 5 minutes. Arrange the pizzas, hummus, vegetables, and fruit on a large sheet pan.
  3. Serving size: 1 pizza, 3 tbsp hummus, and one-fourth of the veggies and fruit
