Tacos don't get much simpler or easier than this. The spices take just a moment to stir together, the meat cooks in minutes, and once it's time to assemble, it's pretty much time to eat. This filling is incredibly flavorful thanks to the robust spice mix and the addition of brown sugar and vinegar at the end of cooking. Once you spoon it into a taco shell or corn tortilla, you're nearly ready to eat. Add any toppings you might like, such as pickled onion, fresh pico de gallo, cilantro sprigs, and a squeeze of lime juice, to name a few. At that point, it's time to sit down to eat.

Chili powder

Uncooked boneless skinless turkey breast

¾ pound(s), ground

Water

½ cup(s)

Cider vinegar

1 Tbsp

Unpacked brown sugar

Store-bought taco shells

8 medium, or 6-inch corn tortillas

Instructions

  1. In a cup, stir together the chili powder, cumin, paprika, salt, garlic powder, onion powder, oregano, and cayenne. Set aside.
  2. In a large nonstick skillet over medium heat, cook the turkey, breaking it up with wooden spoon, until no longer pink, 3–5 minutes. Add the spice mixture and the water, stirring until mixed well. Reduce the heat to low and simmer, stirring occasionally, until most of the liquid is evaporated, 10–15 minutes. Stir in the vinegar and brown sugar; simmer for 3 minutes longer.
  3. To assemble the tacos, spoon 1/4 cup of the turkey mixture into each taco shell. Top each with 2 tablespoons pickled onion, ¼ cup pico de gallo, and other toppings of your choice.
  4. Per serving: 2 tacos (without extra toppings).
