The turkey salad brings together elements of a traditional creamy, mayo-based sandwich filling with Mexican ingredients like fresh cilantro, spicy pickled jalapeño, and lime (both the acidic juice and the super-flavorful zest). And this dish gets even better when we top the filling with shredded lettuce, diced tomatoes, and grated cheddar cheese, and fold it up in a soft flour tortilla to make fresh, fantastic tacos. This no-cook recipe takes just a few minutes to make, and is great for lunch or dinner; eaten at home or wrapped up to bring to work or school. Let these tacos take the place of takeout. They're healthy, tasty, and just as quick.

Ingredients

Cooked skinless turkey breast

8 oz, shredded, (about 1 cup)

Cilantro

3 Tbsp, fresh, chopped

Pickled jalapeño peppers

2 Tbsp, chopped, sliced, drained and finely chopped

Reduced calorie mayonnaise

2 Tbsp

Lime zest

1 tsp, grated

Fresh lime juice

2 tsp

Table salt

¼ tsp

Fat free flour tortilla

4 item(s), (8-inch), warmed

Lettuce

1 cup(s), chopped, green leaf variety, thinly sliced

Tomato

1 large, cut into 1/4-inch dice

Reduced fat cheddar cheese

4 oz, (about 8 Tbsp), shredded

Instructions

  1. Mix together turkey, cilantro, jalapeño, mayonnaise, lime zest, and juice, and salt in medium bowl.
  2. Lay tortillas on work surface. Put 1/4 cup of turkey mixture on one half of each tortilla; top with 1/4 cup of lettuce, one-fourth of tomato, and 2 tablespoons of Cheddar. Fold tortillas over to enclose filling.
  3. Per serving: 1 taco
