Ingredients

Low fat cream cheese

¼ cup(s), softened

Crumbled feta cheese

2 Tbsp, with basil and tomato

Dijon mustard

1 Tbsp, country-style

Olives

12 gm, kalamata, pitted and chopped

Garlic

1 clove(s), minced

Fresh basil

1½ Tbsp, chopped

French bread

8 oz, cut in half horizontally (1 loaf)

Spinach

2 cup(s), baby

Tomato

4 slice(s), 1⁄4-inch-thick

Instructions

  1. Combine first 6 ingredients in a small bowl, mixing well. Spread cream cheese mixture evenly over bottom half of loaf. Place spinach and tomato slices evenly over cream cheese mixture on bottom half of loaf. Top with remaining top half of loaf. Cut into 4 equal sandwiches. Yield: 4 servings (serving size: 1 sandwich).
