Tomato and Nectarine Salad with Scallions and Pumpkin Seeds

Feel free to substitute peaches or plums for the nectarines or use a combination of stone fruit.
fresh tomato(es)1 pound(s), any kind, cored, sliced or chopped
nectarine(s)1 pound(s), pitted, cut into thick wedges
extra virgin olive oil2 Tbsp
fresh lime juice2 Tbsp
kosher salt½ tsp, or to taste
arugula5 cup(s), baby variety
uncooked scallion(s)4 medium, ends trimmed, thinly sliced
roasted salted pepitas3 Tbsp
- Place tomatoes and nectarines in a large mixing bowl; drizzle with oil and lime juice. Sprinkle with salt; gently combine with your hands.
- Place arugula on a large serving platter; spoon tomato mixture over top. Sprinkle with scallions and pumpkin seeds; serve immediately.
